Cocadas

Coming from a Chilean family, we make empanadas and cocadas to celebrate any special occasion whether it’s a birthday, a graduation, a wedding, or Chile’s Independence Day on September 18th (Viva Chile!).

INGREDIENTS:
•    4 cups of finely crushed graham crackers
•    1 13.4oz can of dulce de leche
•    1 ½ cup of shredded coconut, divided

INSTRUCTIONS:
1.    In a food processor or blender, grind the graham crackers finely, about two minutes.
2.    Roughly chop 1 cup of the shredded coconut and add to a bowl with the graham crackers and dulce de leche. Mix well. Place the remaining ½ cup of shredded coconut on a plate.
3.    Scoop out portions (about two tablespoons worth) and roll between hands to form balls.
4.    Pass each ball through the remaining shredded coconut.
5.    Serve or store in an airtight container for up to 5 days.
